Usually Allowable.-Broths, purees, cream soups ; raw, panned or broiled oysters ; broiled steak or chops, roast beef (rare) or mutton, stewed sweetbread ; roasted or broiled chicken, squab, game ; rice, some fresh green vegetables (lettuce); stale, toasted or pulled wheaten bread, zwieback ; stewed fresh or dried fruits ; weak, unsweetened tea or coffee, cocoa, some mineral water or light wine. Occasionally Allowable.-Fresh fish (sole, whiting, blue-fish, white-fish, bass), without sauce ; broiled bacon ; soft-boiled or poached eggs, omelet; butter; fresh young peas or Lima beans, baked potatoes, raw tomatoes, boiled onions, seakale, stringbeans, asparagus, stewed celery, spinach ; macaroni, spaghetti ; puddings (not too sweet), junket, cup-custard, wine or lemon jelly ; some fresh fruits. Special Diets.-Milk in various forms, koumiss ; scraped beef, beef juice or extracts ; predigested milk, oysters or beef. Avoid.-Au excess of food and anything for which the patient has an idiosyncrasy ; thick, rich soups ; crabs, lobsters, shrimps, terrapin ; fat or tough meats ; cheeses ; starchy and raw vegetables (roots and tubers) ; fresh bread, hot cakes, coarse cereals ; pastry, ices, cakes, sugar and confectionery ; berries, nuts; strong alcoholic beverages ; condiments ; rich salads. 2 Especially Indicated.-Foods having a bulky residue or special aperient properties : Corn, peas, beans, potatoes, salsify, tomatoes, boiled Spanish onions, rhubarb, spinach ; Graham or rye bread, gingerbread, oatmeal, cornmeal; molasses; grapes, pears, peaches, oranges, cherries, plums, stewed dried fruits (prunes), figs, raisins ; berries ; copious draughts of water ; cofi'ee, grape juice, a laxative or purgative mineral water (best before break- fast), beer, cider. Avoid.-Eggs, milk, fried food and rich dishes ; sweets, pastry, puddings, bananas, pickles ; tea, sour and red wines ; condiments. CONSTIPATION. Small quantities of bland, unirritating, un- fennentable foods are required. Acute.-Food may be withheld or restricted to barley-water, arrow-root gruel, etc. Chronic.-Broths, thickened with tapioca or sago ; raw, panned or broiled oysters ; broiled chops or steak, stewed sweetbread ; white meat of chicken ; soft-boiled or poached eggs ; rice, baked or mashed potatoes; stale, toasted or pulled white bread ; arrow root, tapioca or cornstarch, plain or in puddings ; macaroni ; custard, junket; some astringent wine, brandy. Special Diets.-Milk in some form, es- pecially boiled or predigested ; beef or clam juice ; scraped beef or oysters (may be pepton- ized). Avoid.-Thick soups ; indigestible meats ; vegetables ; coarse cereals ; sweets, fruits, ber- ries, nuts ; most beverages ; condiments, salads. DIARRHCEA. 3 FEVERS. Diet may be restricted to milk (boiled, Pas- teurized or peptonized) ; with albumen, rice or barley water. Usually Allowable.-Broths, purees ; soft- boiled or poached eggs ; the finer cereals ; arti- cles in special list; cup-custard, junket, ices, jellies ; fruit juices ; weak tea, cotfee or cocoa, lemonade, soda-water, stimulants. Convalescence.-To the above may be grad- ually added: raw, predigested or panned oysters ; broiled chops or steak, rare roast beef; squab, chicken ; toasted or pulled bread, zwie- back, crackers ; milk-toast, panada, caudle ; broth with egg ; plain puddings, etc. Avoid.-All foods containing seeds or having large quantities of indigestible residue, such as the coarser meats and vegetables, corn, toma- toes, oatmeal, fresh fruits, berries, nuts. DEBILITY OF TUBERCULOSIS, etc. Give at frequent intervals as much concen- trated, nourishing and appetizing food as can be assimilated. Forced feeding may be em- ployed. Especially Indicated.-Fat meats (rare), bacon ; raw, soft boiled or poached eggs ; un- skimmed milk or cream diluted with carbon- ated water; butter; cereals (aided by malt extract or diastase) ; beef and clam juice, scraped beef, egg-nog, milk-punch, koumiss ; predigested foods ; cereal and suet puddings ; cocoa, chocolate, malt beverages or light wines. • Avoid.-Coarse and indigestible articles. 4 ALBUMINURIA AND BRIGHT'S DISEASE. Usually Allowable.-Purees of barley, rice, onion, celery ; fish soups ; fresh white-fish ; oysters and clams ; white meat of chicken, pork, bacon, or ham, once daily; butter, most vegetables ; bread, cereals ; puddings, jellies ; fruits and berries ; weak tea, some diuretic mineral water, some light wine; plain salads. Special Diets. - Diluted whole milk, skimmed or buttermilk ; milk toast; gruels ; koumiss ; rice and milk. Avoid.-Any diet which renders the general condition of the patient worse ; especially soups, broths, meat extracts, meats (except as above) ; eggs ; cheeses ; potatoes, peas, beaus, lentils ; pastry, sweetmeats ; malt or spirituous bever- ages ; condiments. LITH/EMIA, GOUT AND ALLIED CONDITIONS. Allowable (in moderate quantities).- Broths, purees, and vegetable soups ; fresh fish ; meats (strictly limited), beef, mutton, sweet- bread, bacon, tripe, white meat of chicken, game ; skimmed milk, buttermilk ; eggs (very few) ; butter; young peas, baked potatoes, green vegetables (except as below); stale, toasted or pulled bread ; cereals; plain puddings ; fresh fruits (?), melons (?), stewed or baked apples, stewed pears ; tea and coffee (without sugar and cream), lemonade, mineral (especi- ally lithia) waters. Avoid.-Salted fish ; shell fish and Crustacea; preserved meats (except bacon) ; veal, pork, 5 duck, goose; cheeses; starchy vegetables in excess, especially peas, beans, lentils, beets, radishes, tomatoes, asparagus, rhubarb, spin- ach (?), sorrel (?) ; pastry and sweetmeats ; fruits and berries generally; alcoholic beverages, especially malt and spirituous liquors, Port, Madeira, Sherry, Burgundy, cider ; condiments; rich salads. Cantani allows the moderate use of broths, fish, fresh eggs, green vegetables, with large quantities of water. He forbids all fatty, starchy and saccharine foods, milk, cheeses, all acid foods, condiments, coffee and alcoholic beverages. DIABETES. The diet must be regulated according to the nature and severity of the condition. Unconditionally Allowable.-Clear soups and broths (with or without eggs); fresh fish (without flour sauces), salted fish, sardines in oil; shell fish (?), Crustacea, terrapin ; meats (except as below); poultry, game ; eggs ; butter ; cheeses ; fresh green vegetables (some limited); pickles ; tea, coflee, lemonade (sweetened with saccharine); light Moselle or Rhine wines, claret or Burgundy; condiments ; salads with plain dressing. Permissible in Moderate Quantities.- Salmon, lobster, anchovies; corned beef, ham, tongue, calf's liver, sausages ; cream ; salsify, turnips, celery or pumpkins (of any one two tablespoonfuls); green peas, beans, carrots or Brussels sprouts (1 tablespoonful); artichokes (1J), radishes (8), tomatoes (2),. melon (1 slice); apples (1), peaches (1), raspberries or strawberries (1 spoonful); cocoanut (1 slice), 6 walnuts (2), hazel nuts (6), almonds (3), Brazil nuts (8), olives, truffles (1), mushrooms, fish sauces, pate-de-ibie-gras. Conditionally Allowable.-(Any one in place of 2 ozs. of bread.) Milk, koumiss or cream (1 quart) ; rice (1$ ozs.), peas, beaus or lentils (dry 2 ozs.); green peas (4 ozs.); pota- toes (6j ozs.); rye or Graham bread (2| ozs.); zwieback (Ij ozs.); aleuronat bread (4 ozs.), oatmeal or macaroni (1^ ozs.); fruit jelly (2 ozs.); cane sugar or honey (If ozs.); grapes, apples, pears, plums, apricots, cherries, etc. (of any one 4f ozs.); peaches (3); raisins, dates or figs (If ozs.); bananas (3); berries (8 ozs.); chestnuts (2i ozs. unshelled); walnuts, hazel nuts, almonds or Brazil nuts (a handful, unshelled); cocoa or chocolate (lj ozs.); beer (1J pts.) or sweet wine (a wineglassful).- Von Noor den. Special Diets.-Skimmed milk, butter- milk or koumiss. Avoid (except as above).-Shell fish (?), liver, milk (?), starchy vegetables, bread, cereals, pastry, puddings, ices, cakes, jellies, cane- and grape-sugar, honey, molasses, con- fectionery ; fruits ; berries; chestnuts, pea- nuts ; malt or spirituous liquors aud sweet wines. The total amount of food to be reduced ; sugars and starches restricted or prohibited ; the amount of fluid limited, especially at meals. Allowable.-Clear soup (4 ozs. for dinner); broiled fish ; meat, poultry or game (not more than 6 ozs. twice daily); two soft-boiled or OBESITY. 7 poached eggs ; green vegetables ; well toasted bread ; fresh fruits and berries ; some alkaline mineral water ; a little Rhine wine, still Moselle or claret (fluids preferably between meals).-Feo. Avoid.-Thick soups, eels, salmon, mack- erel ; milk ; starchy vegetables; fresh bread ; cereals; pastry, puddings and sweetmeats; beer, porter, sweet wines and spirits. Banting System.-Total quantity of food reduced to 21 to 27 ozs. per day, one-half meat ; bread 2 ozs.; green vegetables and fruit ; fluids 35 ozs. (severe). Ebstein System.-Allows abundance of fats (fat meat, cream, butter); peas, beans, asparagus, spinach and cabbage ; bread 3J ozs.; fluids restricted. Oertel System.-Less fats, more proteid and carbohydrate food than the above, com- bined with graduated exercise. Schweninger System.-Essentially the same as the Oertel system, but fluids are for- bidden until two hours after meals. Salisbury System.-Diet of rare meat and hot water.
